What do ppl do? I know a lot of ppl leave water inside if Shabbos is the last day, but I don't think you can halachically put water in to heat up after Shabbos on yom tov if you aren't cooking it to be used?

If you only need it on for Shabbos, use a timer with only 1 OFF pin.
Manually turn the dial to ON before Shabbos starts, have the OFF pin set to 3pm or so the next day. And that's it. It won't turn back on since you're not leaving in any ON pins.

Thank you for responding! I may be misunderstanding but how do you get a timer with only one pin? Do you somehow manually remove all the other pins?

The standard old fashioned timer is a white box with a bunch of slots for pins. It comes with red and green pins that you put it at whatever times you want. You only put in 1 off pin. That's it. I do this every shabbos.

Is there a danger in leaving the unit on with the ceramic pot out? I.e. using it for cholent for shabbos and then just not returning the insert to the fire at any point? I'm pretty sure I've done this before. If set on low/ warm it's so low heat. I can't imagine it's dangerous. Am I wrong?
