I’m trying to figure out how I will cook efficiently. I really don’t like making some foods and then reheating.
Is it crazy to keep a gas oven on at 150 degrees for the entire Shabbos/yt?

I keep mine on 190° for shabbos. Then it goes to 350° for YT.

It's not crazy; I've done it yamim tovim where I keep the oven on 200 or 250 for the whole YT. (just make sure your oven doesn't have an automatic shutoff) But keeping an oven on does heat up the house, so for Shavuos (when we really don't need extra heat!) I usually do not leave the oven on. I keep one flame on plus a plata on a timer set to go on a few hours before each meal (and then turn off afterwards).

I cook most things in advance and use a hot plate on a timer. Last night or last day I open a flame on the stove to make something fresh and leave it on until motzei YT.

If you have a gas oven, whether it's a burner you leave on or the oven itself, the very small amount of carbon monixide released from the oven will build up over a 2 or 3 day y"t.
It should be fine to leave on for yt, but make sure to leave a kitchen window slightly open and the whole area should be well ventilated.

I am having tons of company for one meal. Is the hot plate really ideal like all my food will get hot and not burn? When we're just my small family I am not so nervous ,since it is much less food and I can maneuver it so it stays a good temp.

We started using sternos for reheating food so we dont have to leave an oven on for 3 days. Especially Shavuos when it's hot.

Yes I leave it set at 170.
Put the food in before I go to shul and its nice and warm when we come home.

Please can someone help me. All my food is fully cooked. How long does chicken, side dishes, etc need at 225 to be hot? An hour? More?

I think about an hour but less for some things . Chicken on the bone will take longer than vegetables and challah, or shnitzel, but lasagna will probably take some time
