Within Lake George is there any public transportation and does Uber operate there? Also, are there any kosher restaurants in the area? Besides for The Great Escape, Splash Water Kingdom and Ausable Chasm, what other attractions are there that are kid friendly?

No kosher restaurants. There may be some buses, though I don't recall seeing any. I certainly wouldn't count on it to get around. The crowded touristy area near the lake can be walked, but other attractions are much more spread out. There should be Uber and/or local taxis though.
There's a wonderful ropes course in the area. Howe's Caverns isn't so far away. There's also mini golf and go carts. And renting a speed boat to spend a few hours on the water (with tubes and/or skis if you like) is really what makes the area unique! If you don't want to do that, there are huge steamboats that go out onto the water as well.

I don't remember the name, but there's a rafting place that's very family friendly. The run is about an hour and a half, and not scary.

The steam boat called the Minnie Ha Ha takes you around the lake.
I don't recall seeing any public transportation .
We walked from our hotel to Great Escape. It was right next door.
We went to Walmart for drinks and snacks
Food we brought from home and the hotel room had a small fridge.
There was a minyan in a tent nearby with the Chabad shailach from Saratoga .
