May we eat just plain chicken soup in the 9 days? Without the chicken, just clear soup. What about just the beans from chalont without the meat??

no. you cant eat food cooked with meat. But you are allowed to eat parev food cooked in a clean meaty pot.
(just read up on all the halachos this morning.)

I think as long as one of the pans (meat or pareve) is covered, it should be fine.
