So it looks like we can get away without the kids for 2 days 2 nights!! We live in Monsey.
We don't want to shlep food. Hotel isn't a big factor, we have points in big chains etc.
We like nature, water activities, beach (but quiet, we appreciate tznius) preferably close to minyanim. We need very peaceful, nice scenery. We can't do hiking for health reasons. I would love to do segways, but not a must.
Must is private boat rental, and kayak/canoo rental. Great nature.
Please be specific with recommendations, including names/locations of attractions and kosher restaurants.
We arent looking to go to a frum hotel program.
Thanks so much! We never get to do this!

I think it's going to be hard to find everything you're looking for within 2 hours without being part of a program. You could stay in Scranton, which has minyan and is in reasonably proximity to the Poconos for boating, nature, etc. Or you could go to Tannersville, which has one small kosher dairy place and also has minyan, and is near North-South Lake with boat rentals.

I think you'll be happiest with Tannersville. It is certainly beautiful and peaceful. As for food, Country K is the local kosher supermarket, and it also has a milchig menu that's made to order. Other cities may have more food (e.g. Philly), but will be sorely lacking in beautiful and peaceful.
