My husband has been begging me to make overnight potato kugel. They serve it at our shul for kiddush and it’s sooooo good! I once tried making it by making my usually recipe and leaving it overnight we’ll covered on my hot plate but it did not work out I’m thinking from the fact that the heat only came from the bottom. Can anyone suggest a tried and true fool proof recipe with any tips and tricks? I don’t leave my oven on for shabbos so I would have to make it Thursday night- how long should it be in the oven if I serve it Friday night?

I make a regular kugal then when it’s done I -
Cover it really well
Put a pan of water on the bottom rack right underneath where the kugal is
Leave oven on 240 overnight
It is sooooooooo good!

I put up my kugel Thursday night, it’s in the oven about 12-14 hours.
The exact method:
10 potatoes
8 eggs
3/4 cup oil
1 cup seltzer
About 2 tsp salt
Preheat the oven to 550. Put the kugel in till it’s nice and brown on top. Lower to 350 for an hour. After an hour pour water on top of the entire surface of kugel. Let it get absorbed into the kugel. Cover with aluminum foil and lower the heat to 250. Then leave it in about 12 hours overnight.
Put on the hot tray before the zman.

9 potatoes
1 small onion
9 eggs
1 C seltzer
1 C oil
1/2 TB salt
1/4 tsp pepper
Shred potatoes + onion
Mix everything else
Bake uncovered on 400 for 1 hour
Bake covered on 200 overnight
Delicious!

Just wondering why the seltzer? I’ve seen some recipes that don’t have water in it as well. Won’t it be soggy??

Since I started making this overnight potato kugel (from fresh n easy) my husband doesnt let me make any other...he says it tastes like kiddush kugel.
5 lb potatoes, peeled
1 large onion
8 LARGE egg
3/4 cup oil
½ cup boiling water
1½ Tbsp salt
⅛ tsp black pepper
Preheat oven to 350°F.
Grate the potatoes and onion. Mix in the eggs, oil and boiling water. Season with salt and pepper.
Transfer the potato mixture into a 9x13 inch pan. Bake for 2 hours, uncovered.
After 2 hours, cover tightly with 3 layers of foil. Place a pan filled with water on the bottom rack of water. Lower oven temperature to 220F and bake 8 hours or overnight.

Not at all! Seltzer and water aren't the same! The seltzer carbonation just does something so good to the Kugel.

Though my recipe is different I do the exact same method of baking as listed above and it works perfectly.

Only plain seltzer. Unless you want fruity potato kugel.
You can use boiling water.
