We recently had an event and are left with extra pastrami , salami and smoked turkey breast. I would like to make something with it that is freezer friendly. Any ideas?

I freeze deli all the time, as it is. Just make sure it is wrapped well.

Deli purses. Saute onion, add various shredded deli. Add some spoons of sauce and mix. Spoon into 5" pasty squares. Bring up sides and pinch together to create a money bag. Egg and bake.

I did it once and it’s possible that I had and wrapped it well enough but my family definitely tasted the difference so I’m not gonna try it again right now

I make a deli knish that freezes well. You need to defrost overnight and then warm up well.
Dough
4 cups flour
1 cup oil
1 cup boiling water
salt
mix. roll out. spread ketchup and mustard. make a layer of deli. roll into a log.
egg the top. bake for approx 20 min.

I make this recipe every Yom Tov and everyone loves them. The recipe is from one of the winners of a recipe recipe contest that took place in 2011 for the (Ami) Whisk magazine .
Cabbage Pastrami Knishes
5 cups shredded green cabbage
1/2 Spanish onion (I use regular onions)
1/4 cup oil
6 oz pastrami cut into thin strips
1 1/2 tablespoon mayonnaise
1 tablespoon mustard
1/4 cup sweet and sour duck sauce
One package 32 mini puff pastry dough squares (3x3)
Duck sauce for brushing
Preheat oven to 350
Sautee oil, cabbage and onion over medium heat and cook until soft about 10 min. Remove from heat
Add pastrami, mayo, mustard, and duck sauce
Full each square with pastrami cabbage mixture. Fold and pinch to form triangle
Brush top of each knish with duck sauce
Bake 25 min or until golden.
You can freeze before or after.

Freeze before egging.
Thaw, egg and bake fresh if you can.
If you must Freeze it already baked, you can.
