Supper idea with deli meat - time sensitive!

Any ideas of a supper with deli meat? Heres what I thought of so far but none really spoke to me:

Hot sandwiches
Deli salad
Scrambled eggs with deli

I’m thinking preferably something hot, I have a good array of veggies in my fridge to work with. I also have basic grains I can cook (quinoa, brown rice, instant mashed potatoes, etc).

Any ideas?

If it's the main for dinner, go with the warm sandwiches.
Bulk up the baguettes with sauteed onions and some pickles. Serve cut up vegetables with a dip.

I think fried rice is a complete meal, it has starch, egg, veggie and meat.

Pastrami knish, overtime cook has one. It's basically sautéed onion and little chopped deli Sautee forever til it's good and crispy, then use as knish filling. Or mix it with mashed potatoes or any other kind of egg roll veggie

Thanks for all the replies! So I ended up remembering a recipe I made for yuntif a year or two ago for pastrami egg rolls (maybe from ramom? With sautéed onions and cabbage, deli, mustard, and duck sauce). I made the filling and we had it in flat bread sandwiches. Came out really yummy! Thanks for all the ideas I will definitely be trying some in the future!

So that’s actually the reason I had deli out to begin with, I opened up big packages of pastrami and corned beef to make deli rolls for rosh hashana 😀
