I know this is subject to debate, but what can I freeze?
Zucchini Kugel?
Olive dip?
Mayo based dips?
Gefilte fish?
Salmon croquettes?
I want to cook everything tomorrow (ya ok. More like the most that I can til I get grumpy and call it quits) for shabbos as well as yuntif. I’m worried about things Spoiling. I don’t think they should sit in the fridge for Friday til Tuesday, for example.
Thoughts?

I freeze gefilte fish. I cut up the loaf into slices and put it in a container. Then I fill up the container about half way with the water.Make sure it is a good air-tight container.

I roasted then froze eggplant (without the added mayoo/liquid smoke etc). I will only be able to tell you Thursday how it turned out.
I am making shnitzel tomorrow and hope to reheat for monday night.
I'm not sure about the dishes you named.
Following.

You can freeze meatballs and meatloaf, noodle kugel, potato kugel, spinach kugel, broccoli kugel, carrot kugel or muffins. You can also make sauces for chicken and freeze them..and then defrost the sauce when needed and make your chicken fresh before Yom Tov.

Salmon croquettes should be made fresh.
If the kugel has flour then it would be ok to freeze for a short time.
The dips and gefilte fish can be made now and used on YT. Just make sure you only take out what you need at each meal so it doesn't keep sitting out for the meals.

Dips will last in the fridge, no worries
Zuchinni Kugel is freezable
Gefilte lasts a week in the fridge
What are salmon croquettes? Like fried patties? Those are freezable

only thing so far that Ive seen a dif in is the potato kugel and I use frozen once for my chulent because then stays together better!
