I have a recipe for fingerling potatoes wrapped in pastrami, with a glaze over it. I’m wondering if I could bake them and freeze?

Don't freeze roasted/baked potatoes (or raw potatoes).

I don’t even think I’d fridge it.
I’d make it fresh and use for that meal only.
