Slice and toss with olive oil. Spread on cookie sheet, sprinkle salt and roast on 375 for about 45 mins. Yum!!

Do you have the first silver platter cookbook? She has a recipe with sliced sweet potatoes arranged vertically in a baking pan. Its so pretty looking and delicious.

Do you slice vertically or in rounds.
I also add some fresh chopped garlic and parsley before serving

I make them similarly. Hasselback potatoes and/or sweet potatoes. Slice a whole sweet potato most of the way through with as many thin slices as you can. Mix together fresh chopped garlic, herbs, salt and pepper and olive oil and brush over the potatoes and try to get it to go down each sliced area. Roast. They are heavenly. The sweet potatoes won't be as firm as the white potatoes so maybe slice a little fatter so it won't fall apart. I just fill a pan with them and they come out so good.

I also love tri color fries with sweet potato, parsnip and beets, baked on cookie sheets at 400 for about 40 minutes.
