Chicken piccata has a light flour dredge but no bread crumbs, you can also cube the breasts and make all kinds of chinese dishes. I like to make saucy recipes with chicken breast because otherwise it gets dried out.

chicken & broccoli stir fry
cutlets (floured) with sauce (soy sauce, oil, garlic, brown sugar) and veggies in oven
beer battered chicken
grilled chicken (or panini with grilled chicken inside)

Nothing specific. I just throw in stuff as I go.
Sometimes I'll do Asian style, with a sweet sauce
Sometimes I just sauté onions and chicken pieces with Montreal Chicken Seasoning
Don't have specific recipes though

Besides for above dishes mentioned
Chicken rollups baked with something inside like pastrami or mashed sweet potaoes.
Chicken Lomein w veggies
Sauteed Chicken cubes with rice & veggies in one pot.
Sauteed chicken cubes with diced onions add spices or soy sauce with sugar.
