Am I doing something wrong?
The cheese is a stringy consistency.
Is it possible to make it with only mozarella/pizza cheese or do I have to add something creamy for consistency?

Is there a reason you only want to use shredded meltable cheese?
What do you mean by stringy? Is the cheese not fully melting and oozing?

Yes for me it ends up being significantly less in terms of cost factor.
However it doesn't come out creamy like when I use American cheese.
It is kind of strands of stretchy cheese.
I did use the cheese straight from freezer but I am pretty sure it was melted sufficiently.

I think it has to do with using frozen cheese. When I do the consistency is different. Try defrosting the cheese before next time. See if its different.

Did you melt the cheese in a sauce or just dump it in the pan with the noodles?

I only use shredded cheese.
Pasta, sauce, cheese.
MIX,Bake or Freeze and Bake at a later time.
I put it in the oven frozen

I think Rutabaga's question was did you just toss in the cheese, or make a cheese sauce out of it?
A very simple, creamy cheese sauce, without all the patchkying of classic cheese sauce, is to pour milk (can be low fat or even skim, doesn't have to be cream or full fat) in a pan and whisk in about a quarter cup of flour. Heat while whisking till thick. Turn off the heat and add in your shredded cheese, stirring till it's all melted. This is a great cheap, quick, and easy cheese sauce for ziti, mac and cheese, nachos (seasoned accordingly), anything really.

Thanks.
I basically just stirred pasta with sauce and cheese and put in toaster oven.
Did not make a sauce out of it beforehand when I did it.

It also depends on what brand of shredded cheese you use. I tried Fresh and Healthy and it did not melt...but the cheese itself tastes really delicious. When I used Haolam or Natural Kosher, it was melted.
