I have one.
Zuchini kugel
It's not an exact recipe but basically you boil the zucchinis whole (8-10 medium)then let it drain in a colender for a while (even squeeze them out a little so they are not full of water. Add 3 eggs 1 tablespoon of onion soup mix, 1-3 tablespoons of mayonnaise. 3 tablespoons of flour/potato starch and Salt and pepper to taste. Then blend till its smooth with an immersion blender. Bake in a soufle dish for about 30 minutes. It should still be loose inside and you sort of scoop of out to serve it - it should have the texture of mashed potatoes. It's yum! Smile

I made this one year for yomtov and it was delicious. https://www.kosher.com/recipe/.....-2026 I made it as one large kugel.

Not an exact recipe, but pretty easy to figure out.

Oil the sides of a large pan well.

Get several zucchinis, and one medium yellow onion. Grate them in the food processor.
Put the veggies in a bowl, and add enough flour to coat them well.
If you want to go gluten free, potato flour (not starch) works just as well.
Once the flour has absorbed the liquid from the veggies, add a couple eggs and a few tablespoons of olive oil.
Salt and pepper to taste.
You want to make these about one inch high, not more, or they'll fall apart.

Bake at 375 (medium heat) until a knife inserted in the middle comes out clean. About 20 minutes, more or less. Check on them after 15 minutes, and don't let them overcook. If you will be reheating them on the blech, they can be a little bit underdone.

You can use this recipe to make zucchini latkes, too.

Shred zucchini with skin intact, salt, drain and pat dry.
Saute and season.
Combine with lightly beaten eggs or egg whites.
Bake until browned.
Keep the batter layer thin or it will be too watery.

I cube the zucchini
Salt it and let it sit and sweat for a while.
Then I Pat it dry.
Add eggs salt pepper
Pour into a pan and bake
Sometimes I add sautéed onions
