So I have this idea I want to try but need a little help.
I want to make a jelly roll style thing with ground meat in the middle. I have done this with pizza - I got the recipe here on imamother. I have done this with meat in puff pastry as well.
My problem is I don't want to use puff pastry for health reasons - I rather make a dough from scratch. But I'm scared my pizza dough would become too hard/burn in the hour that the meat needs to cook.
Advice? Different dough recipe that would work with meat and need to cook a full hour? Do I add something to my pizza dough?

Can you cook the meat first, at least halfway through? That way the roll won't be in the oven so long.
Do you have a recipe for a non-sweet pie crust? A flaky pie crust would be yummy.

I think what you’re describing is a Stromboli?
Maybe look for recipes for that online, though I assume most will mix meat/cheese in the filling.

You have to cook meat first. I’ve made pulled beef babka in the past. I’m sure it will work with ground beef as well.

Wow thanks
Now I'm wondering if I should throw my ground meat in yhe crockpot before I go to work so it is cooked when I get home and can make the dough then. Or will it be overcooked?

I’ve made meat knishes using dough recipe from potato knishes. Make the dough, mix some flavorings into the raw chopped meat, spread on dough and roll it up like a jelly roll, cut some slits/vents in to top, bake until golden brown. Absolutely delicious 😋
If you want an exact recipe let me know.

My knish recipe calls for sauteing onion, mixing in meat, some cooked rice or potato (potato makes it fluffier), egg, seasoning including IMO the don't miss one: chili powder.
And just use a knish dough recipe. My go-to has shortening but there are plenty with oil.
Oh, and if the meat is fresh, you can prep it raw and bake it when needed just starting a little earlier. It's absolutely as good.

Dough:
1 egg
½ c oil
½ water
1 t baking powder
1/8 t baking powder
3-4 T sugar
½ t salt
2 ½ c flour (+ as needed)
Filling:
1 lb chopped meat
1 egg
1 lg onion, sautéed
2 T oil
2 T ketchup
1 T mustard
1 t salt
Pepper
Onion powder
Garlic powder
Roll out dough , spread on filling, roll. (I usually make two logs/rolls with this recipe)
Egg and add shallow slices about 1 inch apart
Bake @ 350, 40-45 min until golden brown.
Best when served warm with mushroom sauce.

This recipe looks amazing. How thick should the dough be once it's rolled out?

Oh I am making this right now but you put baking powder twice
