Roasted potatoes: I like to cut up both regular and sweet potatos into bite sized cubes, season with whatever you like and some oil and throw in the oven for a while, stirring every so often.
Green beans, possibly with sauteed onions
rice, either just seasoned or with sauteed veggies mixed in
sweet potato fries
there are always kugels, but that's not so easy.

cauliflower or breaded cauliflower
sesame broccoli
roasted vegetables
orzo with veggies/rice,
broccoli kugel
carrot kugel
apple crisp/crumble
mustard red potatoes/potato kugel

Recently I've been adding cooked pasta or rice (whatever is in the fridge) to the pan of chicken that is mostly baked. The starch gets so flavorful from the sauce / gravy in the pan. I'll also add frozen vegetables then so they don't get soggy. I have some kids who will only eat the veggies like this.
