models of cell phones? For example J vs S for Samsung and within S, S7 vs S8 vs S9?
Are the only real differences, processing speed and memory? What else do the newer ones have that the older or cheaper ones don't have? Is it worth the money?

Newer (android) phones have more features, newer operating systems, security updates etc. Eventually some apps stop supporting older model phones. Additionally newer phones may have longer lasting batteries, better reception and better cameras.
The more expensive models(S vs J) usually have better cameras, more memory, faster processing, better battery life - pretty much all the specs.
If you're worried about the price I personally would recommend a more expensive model phone that's about a year old, there are some decent deals now for the holidays.

Samsung J Vs S: S is the flagship line, J is the economy line.
I have never needed a brand new phone. I need a phone which runs WhatsApp and has a good camera, so I look for that. (Right now using a Xiaomi Redmi 4, and very pleased with it.)
If you can tell us which specifications matter most to you, maybe someone here can recommend a good match
