I just read somewhere on FB that there is an old Ashkenazi minhag to prepare kugels in correspondance with the number of sifrei Torah that we read from in shul on Shabbat.
As a kugel lover, I am intrigued Idea
I was planning on two kugels for this Shabbat (sweet, fruity noodle + cabbage) but now, since we take out three sifrei Torah for Shabbat Rosh Chodesh Chanukah I just might add a potato knish kugel into the mix Very Happy
Anyone familiar with this minhag and its roots?

Tastes very similar to potato kugel for some reason.
You fry up onions and mix them with 1 bag of shredded cabbage + flour (potato starch on Pesach) + eggs, salt and pepper.
Easy and delicious.

Thanks, I wonder if my kids would eat it. Sounds interesting.

Why amother?

I don't have that minhag but I have no doubt that it has some kind of source. Probably chassidish.

I once tried for diet cabbage kugel instead of potato kugel. Recipe I got was no flour. No onions. No sautee. Just a bag of shredded cabbage oil eggs salt & pepper. Bake. It's amazing how close to real kugel it tasted

By us, it's not Shabbat unless there's a kugel Very Happy
Honestly, my kids and DH are not that into it, but it's my favorite part of the meal and my father, who is often here with us, loves kugel too.
So kugel(s) it is....

I do a cauliflower one too but I think it's just as fattening as the potato. It's got full-fat mayo in it.
OTOH, my mother used to make a potato cauliflower kugel which is very similar to the potato knish kugel that I got from this site except that it uses cauliflower for half the potatoes and almost no flour. I guess that makes it less fattening.

Lots of people do kugels (we do not)

I’ve also seen layered kugels.
We have a friend who on such an occasion makes a 3 layer kugel (potato, Khishka, and yerushalmi with schmaltz).

Cool!
Good thing that IIRC the triple Torah thing can only happen in the winter/early spring (Shabbat Chanukah and Shabbat of one of the Arba Parshiyot).
Sounds like real 'stick to your ribs' fare...
