How do you egg wash your challah and how high and long in the oven?
My challah crust don't taste and feel fresh. Plus it tears when husband slices it.
They love the taste and the inside of the challah but the crust doesn't feel freshly made.

I egg wash directly before baking. I bake for 20-25 minutes at 350, but my loaves are on the smaller side (roughly 2c flour per loaf).

Whole egg or just yolk?
We prefer the crust soft.

I egg wash right before baking. 325 for 35 minutes is perfect.
Maybe you need a new challah knife?
