I sauté onions and garlic till soft. Add a bag of asparagus, 1 unpeeled green squash chunks, 1 potato (or parsnip). Sauté till all veggies are soft then add water and simmer for 1/2 hour. (Can substitute soy milk for water if you want creamier soup). Add salt and pepper to taste. Blend till smooth. I sometimes add shredded carrots at this point and cook another 5 minutes.

I use cauliflower instead of potato or parsnip for a lower carb but equally creamy experience. Also if I'm short on asparagus or just want to stretch my dollar a bit, I'll add in broccoli stalks or kohlrabi which imo have a similar flavor profile.

Also coconut milk is even creamier than soy. It's my secret parve weapon Hiding
