When redoing your house, what is important to make sure the contractor takes care of before completing the job? We’re getting to the end and id like to be sure that we didn’t forget anything! Thank you

You need to do a punch list.
Go room by room and scrutinize EVERYTHING
Then go back and do it a second time.
Once they leave that’s the job you will end up with

Yes a punch list for all the little details. Like is a shelf missing? How about a knob? Are all the spaces and tiles grouted properly? Etc etc. It's the little things that can sometimes drive us crazy.

You need to inspect every part of a project before making the final payment, that's true everywhere on Earth and when there is real estate on the Moon and Mars, there too. Bring the plans, the contract, and if you can a friend who is very detail-oriented, and take your time.

Agree with all the above. Make a punch list and do not make your final payment until everything is taken care of.
You didn't say what part of your home you're doing, but here are some things to check:
• Has all debris been hauled away?
• Is everything clean?
• Are all doors/cabinet doors/outlets/fixtures set straight?
• Does everything open and close properly?
• Are paint finishes smooth?
• Have all caulked or grouted areas been finished neatly?
By the way, it's a good idea to keep some extra tiles, cabinet pulls, cabinet trims, flooring etc. You may need a piece later and if you need to repaint a chip in a cabinet, you can use a trim piece to test on. Also, keep a record of everything you bought, and keep paint chip samples. I hope you have a notebook or planner to record information.

When my home was done by cheap workers as part of development, I found chipped tiles set in to wall of bathroom. A kitchen drawer or cabinet doors not hung evenly. A shattered window glass. Spaces between floor boards. Window frames not properly aligned. Closet doors bumping into each others. A cracked toilet bowl. Faucets/Levers in bathtubs inserted upside down. Ceilings not leveled. Missing levers to open windows.
