These cookies are out of this world!!!
Chocolate Chocolate Chip Cookies
Ingredients
1 cup butter, softened (I used 'healthy' margarine)
1 1/2 cups white sugar (I did 1/2 white & 1/2 brown sugar)
2 eggs
2 teaspoons vanilla extract
2 cups all-purpose flour
2/3 cup cocoa powder
3/4 teaspoon baking soda
1/4 teaspoon salt
2 cups semisweet chocolate chips
1/2 cup chopped walnuts (optional) (I skipped this)
Directions
1.Preheat oven to 350 degrees F (175 degrees C).
2.In large bowl, beat butter, sugar, eggs, and vanilla until light and fluffy. Combine the flour, cocoa, baking soda, and salt; stir into the butter mixture until well blended. Mix in the chocolate chips and walnuts. Drop by rounded teaspoonfuls onto ungreased cookie sheets. (I rolled them into balls and they flattened a little)
3.Bake for 8 to 10 minutes in the preheated oven, or just until set. Cool slightly on the cookie sheets before transferring to wire racks to cool completely.
Yields 4 dozen

Chocolate Crinkle Cookies! AMAZING!!
Ingredients
* 1 cup unsweetened cocoa powder
* 2 cups white sugar
* 1/2 cup vegetable oil
* 4 eggs
* 2 teaspoons vanilla extract
* 2 cups all-purpose flour
* 2 teaspoons baking powder
* 1/2 teaspoon salt
* 1/2 cup confectioners' sugar
Directions
1. In a medium bowl, mix together cocoa, white sugar, and vegetable oil. Beat in eggs one at a time, then stir in the vanilla. Combine the flour, baking powder, and salt; stir into the cocoa mixture. Cover dough, and chill for at least 4 hours.
2. Preheat oven to 350 degrees F (175 degrees C). Line cookie sheets with parchment paper. Roll dough into one inch balls. I like to use a number 50 size scoop. Coat each ball in confectioners' sugar before placing onto prepared cookie sheets.
3. Bake in preheated oven for 10 to 12 minutes. Let stand on the cookie sheet for a minute before transferring to wire racks to cool.

I make peanut butter chocolate chip cookies that are delicious - they disappear as soon as they are out of the oven!
I use:
3/4 cup peanut butter (melted a little bit)
1/4 cup oil
3/4 cup sugar
3/4 cup brown sugar
1 tsp vanilla
2 eggs
1/2 tsp baking powder
1/2 tsp baking soda
1 3/4 cup flour
bag of chocolate chips
Preheat oven to 350. Combine peanut butter, oil, sugars and vanilla and mix until smooth. Then add eggs and mix some more. Then add baking soda, baking powder and flour and mix - dough will be very thick. Mix in chocolate chips. Spoon onto cookie sheet about an inch apart. Bake for about 10 minutes. Enjoy!

They sound yum.
Has anyone else had success with this recipe for peanut butter chocolate chip cookies, or does anyone have a tried and true recipe, with oil, no margarine?
