ISO oven Pepper Steak without duck sauce/sugar

Does anyone have a recipe for an oven-baked pepper steak without duck sauce or sugar? Preferably with minimal ketchup.

I"m trying to get a soft steak but don't know what to cover with so that it won't be so sweet.

Just use lots of sliced onion, crushed garlic and coarse salt.

2 pounds pepper steak
1 red pepper sliced
1 onion sliced
1 can mushrooms
1 1/2 cups water
2 tablespoons soy sauce
2 tablespoons onion soup mix
1 teaspoon sugar (I use one packet Splenda)
1/2 teaspoon garlic powder
1/4 teaspoon black pepper

Baked on 350 for two hours covered tightly. Goes great with rice.

1 onion, sliced
1 package (about 1 lb.) pepper steak
1 green pepper, 1 red pepper, cut in strips
4 oz. canned mushrooms
1/4 c. onion soup mix
2 c. water

Lay onions on bottom of 9x13. Lay meat over onions, place peppers around meat. Drain and reserve liquid from mushrooms. Pour mushrooms over meat and veg. Sprinkle onion soup on top. Add water to reserved mushroom liquid to make 2 c. Pour over mix and cover. Bake at 350, 2 1/2 -3 hours.

Not everyone likes cooked pepper in my family so I add in other veg. - more mushrooms, carrots, baby corn, etc.

Can I add in baby potatoes to this recipe or will they get too mushy?

Can I pregame like an hour, refrigerate and finish the next day?

Put the potatoes in a separate pan. The two pans can bake side by side.
