I make a tuna/noodle casserole with brown rice noodles and frozen mixed vegies, tuna, cheese, and spices.
It freezes and microwaves wonderfully.

Freeze cooled burgers in buns along with packets of condiments so nothing is soggy. Can be meat burgers, vegan, or legume/cheese.

Container of grilled chicken strips over quinoa with some roasted veggies.

Egg muffin frittata.

Muffins made with almond flour and protein powder.

Make your own kind bars or larabars.

I love larabars, but they are so expensive! I've never thought about making them for myself. Do you have a recipe?

Tuna/salmon paties are portable and can be eaten cold or hot. I bake a bunch and keep them in the freezer
Egg muffins as well, just add any veggies to a muffin holder (use the biggest ones you can find) beat eggs and add to the Veggies.
Schnitzel room temp is ok
Hamburger patties

All these don’t need containers just wrap in foil.

When you prep dinner for the rest of the family make 2 extra servings. He can take 1 with him the next day, and freeze 1 for another time.

Does he have a locker on campus.
Fill it up with shelf stable stuff tuna packets, small condiments. Cans of heart of palm ( the only canned veg I like), nuts. Shelf stable almond milk, instant coffee, tea bags. Etc.
I’ve seen rice noodle ramen noodles, don’t know if it’s healthy.
