Here is another recipe. I have been eating this for lunch everyday and I really don’t need much more...maybe a small salad.
2 bags Pardes frozen chopped broccoli
4 tablespoon butter
1can coconut milk
1cup vegetable broth ( I use a vegetable boullion cube )
1 eight ounce bag of shredded mozzarella cheese
Black pepper, pink salt to taste
Sauté the broccoli in the butter but it doesn’t have to completely thaw. Add the coconut milk and broth. Cook for about twenty minutes. The broccoli should be soft. Use an immersion blender to purée the mixture. Add about half the bag of cheese, but only a little at a time, waiting for it to melt before adding more. Add as much cheese as you like to get the thickness you want. Taste, and season if necessary. I eat one and a half cups and it really fills me up.
