I don't usually bother with potato kugel, but I am making Shabbos for another family, slightly picky, so I want to make one for them. They won't eat much, and I hate using a food processor - I would rather hand grate. I also am nervous to heat up oil.
Do you have an easy, delicious kugel recipe, with 5-10 potatoes, I can make by hand, in about 20 minutes prep time, or less?

Grate 5-6 large potatoes (with hand grater), 4 eggs, 1 cup oil, 1 Tbs. Salt, 1 cup water or seltzer, little black and white pepper (for taste).
Bake on 500° 1/2 hour- 45 minutes. In large round pan. Hearty appetite

1 TBSP seems like lot

Potatoes need a good amount of salt. I would say add even more. It's more of an eyeball it situation, depending on the size of the potatoes you're using

Last time I made a small kugel I used 2 tsp, and it was WAY too salty. Was 6 med potatoes.
