Freezing broiled or sauteed liver?

I have too much broiled liver ( joking it’s never too much but..)

I would like to freeze it for a different week. Am I better off sautéeing it with onions and then freezing or rather freeze plain and sautée when defrosted?

Neither. Liver really doesn't do well in the freezer. Sauteed liver can stay good in the fridge for a week, so I'd just save it in the fridge for next Shabbos.

I freeze the broiled packages I buy from the store. They taste the same to me.

Liver does not freeze well. It gets crumbly and tastes watery.

I asked my butcher about it b4 this past pesach. (I wanted liver for shabbos but the butcher would be closed). He said to sautee and then freeze. It was very good. If you freeze it b4 cooking it will become crumbly. Lately I cook for 2 weeks and leave it in back of the fridge. I always thought it spoils after a few days but some 'balabustas' I know do it.

I have frozen Sauteed liver. It was totally fine. I warmed it before serving.

I always freeze sauted liver. It freezes just fine.

I've heard ppl say liver does not freeze well unless it's chopped. However I've decided to try anyway, Bh with great results. I use only a tiny bit every wk. Only dh eats it with eggs on shabbos. So it's just easier to freeze in small ziplock baggies.
