This is my favorite! Works great with a deli salad, or any assortment of veggies.

6 T red wine vinegar
1.5 T mustard
1.5 t sugar
3/4 t salt
3/4 t pepper
3/4 c oil

I second this! It's amazing! I put it on everything.
Another dressing I love is equal parts mayo and salsa, plus a squirt or 2 of ketchup. I add corn, canned beans, and crushed up tortilla chips (like the ones with the reddish/orange dust of them) to my salad.

And here’s a delicious Caesar dressing. I usually use an immersion blender to make sure the garlic is well incorporated:

1 c mayo
1/4 c sugar
1/4 c vinegar
1/3 c water
3 cloves crushed garlic
1/8 tsp white pepper
