what's the best way to heat on the plata without them getting soggy? I usually lay them flat in one layer without touching, and that works great. But not sure what to do when I don't have enough space on my plata....

Try using wax paper in between the layers and rotate them from time to time.

I have them lined up sideways holding each other up, so that no schnitzel is on top of another one and there's plenty of space for air to circulate, and before Shabbos I prepare the foil on top of my aluminium pan with lots of little holes (I use a knife or fork to do this) so that it holds in the heat to heat them without it getting soggy inside. They come out very nicely.
