Eggplant Parmesan and ?

What can I make with eggplant Parmesan for supper?
I feel like it’s not enough of a meal/ protein to just have the cheese. And don’t want to fill up on it.
(actually making cheesy eggplant boats, no frying)

Any ideas?

I like it with Greek salad but also great is an avocado tomato salad with quartered eggs.

Any of the above.

I'll do it with cut veggies and chumus sometimes, too.

Most of us get more than enough protein each day so I'm not sure it even needs a protein side.

This seems like a winner! Thank u- love the avocado for the filling factor.

I’m a big fan of Greek salad/ salads wth chickpeas etc. but my husband not so much so I end up making that for myself for lunch.

By a simcha served as a main it's usually served together with mashed potatoes + soup /salad is a full meal

You can also sautee fake meat and add it to the stuffed eggplant for extra protein
