My shabbos:

Challah (from my mother) and dips (bought)
Chicken soup with matzah balls
London broil
Potato Kugel
Salad

Challah and dips
Herring
Salad and egg salad
Cold cuts
Cholent (with potato Kugel inside)

Desert for both will be fruit.

It's served in courses. Nothing on the table. Then challah and dips. DH has about a dozen dips. It could be more. He's in charge of dips.

Fish comes out fast followed quickly by salads.
When fish is cleared, dips are removed. Soups or chulent come out. DH has Lima beans and chick peas with his chicken soup. Liver and gala are served with the chulent. Shabbos day, I bring out the cold cut platters. Friday night, I wait for the soup to be cleared before I bring out the main course. There is usually a selection of sides and mains.

Everything gets cleared before dessert.

Simple this week:

Challah
G fish maybe
Potato kugel
Rotisserie chicken (we have a rotisserie and its the best thing ever)
Green beans
Chocolate cake

Lunch:
Challah
Salad
Cholent
Half and half kugel and potato kugel
Grilled chicken for salad
Dessert that the guests are bringing

This week was tiring so I only made soup cholent meat and gefilte fish . Bought kugel and apple cobbler and dips . Dessert baked apples . Last week when we had guests I served
Fish
Broccoli salad
Coleslaw
Soup with luckshen
Minute steak - recipe adapted from here
Breaded chicken cutlet strips
Roasted red potatoes
Roasted cauliflower
Apple kugel
Baked apple with cut up fruit
Shabbos day is usually eggs liver , deli cholent and kugel

Yum, can I come to your house?! Lol. Typically how many people are you feeding ? Are you making enough of both menus for everyone to take what they want or just small amounts of the traditional stuff for your DH?

Fri night:
Challah(bought)
Chicken soup with matza balls.
Maybe dips
Chicken on the bone(with garlic and brown sugar)
Yerushalmi kugel
Roasted Greenbeans with onions and ginger
Maybe a salad
Guests are bringing dessert

Lunch:
Challah
Dips +salsa gefilte fish
Shnitzel
Yerushalmi kugel
Salad or leftover veggies
Dessert

Lavender, my menu is similar to yours. Simple. We hosted a lot of family last week; this week I cooked really simply.
No red meat because we had a lot over the past week and a half.

Friday night: challah, gefilte fish, Cole slaw, tomato salad, chicken soup, stuffed onion chicken, cauliflower kugel (frozen from last week), apple cran kugel (frozen from last week), with compote for dessert.
Tomorrow:
Gefilte fish, Cole slaw, tomato salad, cholent, deli, brownies for dessert.

Tomato dip. Parsley dip. Roasted olives. Eggplant babaganush. Marinated eggplant salad.
Cooked salmon & gefilte fish.
Chicken soup with noodles.
Chicken from soup
Onion kugel
Chic peas/Lima beans
Potato kugel
Lukshen kugel
Challah kugel
Apple strudel
Broccolli kugel
Farfel
2 layered jello

Gefilte fish. Dips.
Egg salad. Cut up veg.
Chopped liver/ sauteed liver
Gala. Cholent. Cherry compote
