Does anyone have any suggestions for a vegetable side dish for during the week?

Try:

Corn on the Cob

Sweet Potatoes or potatoes cut in thin circles.
place in ziploc bag, sprinkle in bag some salt, garlic adn a little olive oil to taste and shake the bag.

place on wax paper on cookie sheet and bake for 20 minutes.

If you don't have much time.. boil up a bag of frozen veggie mixes.

sauteed onions with zuchini and tomatoe sauce.

Steamed, green beans or butternut sqaush.

*Saute onion and mushrooms in olive oil with a little salt.
*slice zucchini, boil in some water, marg, salt and dill...yum
*Steam Broccoli, add lemon juice,oil, fresh garlic,salt,pepper

I am usually very bad at the vege thing, hope these help!

mashed potatoes
steamed green beans
salad...
stir fry vegies (zucchini, colored peppers, onions, mushrooms)
canned corn- cream style
blanched carrot sticks with fresh green beans

blanched= boil water. drop prepared carrot sticks and whole green beans (with just the stem area trimmed) into pot for roughly 4 minutes. You want them in just long enough to bring out their vibrant color.... and remove immediately! Purpose is to semi-cook them..... (can eat as is, or pour vinegarette over)

btw..... I always keep frozen vegetables in the freezer for quick additions when necessary.

creamed spinach - cook frozen spinach with salt and garlic powder in a little water. Sprinkle with flour and stir in some milk, cook a little.
frozen ratatouille mix - add tomato sauce and spices
letcho (sauted onion, tomatoes and green peppers)
frozen peas - saute minced onion in butter or margarine, add peas, s&p and chicken soup mix if you can find the one w/o msg

there's a roasted pepper recipe in kosher pallete (or maybe it's kosher by design) that's good. it's called checkerboard of roasted peppers. not sure of the page #, but there's a picture of it on one of the section dividers.
Green bean recipe:
sautee one small onion in a Tbl. oil. add some S & P, add greenbeans (that have been trimmed and boiled for 5 minutes then rinsed in cold water), add 1/4 cup sliced almonds or pistachios, add about 1/2 cup OJ, and let this all simmer for 10-15 minutes.

Queen: I also always have frozen veggies in the freezer for a fast quick addition Smile
