Any ideas for keto diet Pesach meals that I can cook on my stovetop?

I would imagine that for pesach going completely keto would be hard. But having done similar style cooking recently I can offer a few ideas:
1)ratatouille--eggplant, peppers, mushrooms, tomato sauce, sauteed mushrooms.

2)I did a zoodle/mushroom onion sauteed dish on my stovetop

3)chicken and salsa in a slow-cooker/blech

4)meatsauce on zoodles.

5)If you have almond flour, I made a mock-bread crumb out of almond flour onion powder, garlic powder, parsley, salt, pepper, paprika and coated eggplant and zucchini with egg and deep fried them. (if you want to do milchig I added some parmesean cheese to the mixture) and dip in marinara sauce.

Last year I made Pesach without an oven. We didn't do any gebrokts, and the only "grain" I served was quinoa.

I lost 10 pounds in one week, and felt amazing! No bloating, no stomach aches, and I never felt like I was going hungry.

I only ate the minimum amount of matza for the seder, and none the rest of the week.

I don't do fancy cakes, complicated recipes, or anything patchke. Just lots of healthy, whole food. If you eat meat, chicken soup and beef stew are super easy. Add steamed or stir fried veggies on the side, quinoa, and a green salad.

If you get frustrated, just keep telling yourself "It's only a week."

It should be pretty similar to what you're cooking year round for keto.

Only choose low carb veggie ideas like green vegetables (lettuce, celery, cucumber, spinach, broccoli, Brussels sprouts, asparagus, avocado, kale, zucchini), yellow summer squash, tomatoes, onions, peppers, cauliflower, cabbage, mushrooms, daikon, radish, etc.

Things like cauliflower rice, meatballs and zoodles, summer squash and tomatoes, zucchini spaghetti salad, cauliflower mock potato salad, cabbage salad, sauteed veggies, salad with avocado dressing, sauteed spinach, steamed broccoli, variety vegetable soups, caramelized Brussels sprouts, garlic asparagus... all can be made without an oven.

I also don't cook anything dairy on Pesach, because I can't be bothered to deal with two sets of dishes, etc.

I know dairy isn't really on the Keto list, but I thought I'd throw that out there anyway.

Separate the drums and the thighs. Season well. Pan sear.
You can use your own mix of spices and follow this method.

Or you can brown the chicken then add some water and cover until soft.

You also might want to look into a crockpot/instant pot to add to the stove.
