Exciting that these pesach threads are starting now!
I was thinking maybe I would make a pot roast instead of a mock cholent.
I’ve made chuck roasts before but never slow cooked overnight. Has anyone done this?
Would appreciate any recipes or tips!

I haven't had good results when cooked for longer than 10 hours.

I've done successfully middle chuck for a yomtov morning.
layer sliced onions, meat, onions, meat. spice rub each piece of meat. you must have two layers or it will dry out. I actually put it up really late because it's y't so I didnt have to put in before zman, so do right before licht bentchen.
I have a 5qt crockpot that inserts into the crockpot. I leave it on low.
