Anyone have a recipe for white cutlets that won’t dry out? Want it for a salad

This is heaven. I skip brining.
Must use whole cutlets, not cut thinner or butterflied.
Use oil to brush the cutlets. Combine seasoning (use more salt) and sprinkle all around chicken. Let sit 30 minutes while oven preheats.
