I made challah dough earlier and left it out at room temp for about 8 hours.
I wont be able to bake it till tomorrow. im thinking about storing it in fridge overnight.
can I still use the dough? and if so, is the challah dough still going to taste ok?

Put the dough in the fridge. It should be fine, but MAY have a sour-yeasty flavor. Tomorrow, when you want to work with it, taste a bit (& spit it out!) to check.
