Does anyone have a recipe for a very soft, cakey hamentaschen dough? Dairy is fine.

I tried to look through that but the recipes I found texture feedback for people said were crispy. Can you post a copy of the specific one you found was soft?

3 eggs
1 cup sugar
3/4 cup oil
1/3 cup apple juice
5 to 5 1/2 cups flour
3 tsp vanilla extract
1/8 tsp almond extract
3 tsp baking powder
Beat eggs and sugar until creamy.
Add oil and beat.
Add juice and extracts.
Add baking powder.
Gradually add flour until it becomes a good dough consistency.
Fill with favorite filling
Bake at 350 for approx. 10 minutes (until bottom is golden)
These freeze very well.

I've never had cakes hamentaschen before, but that sounds delicious! I'll have to try next year because my hamentaschen this year are already baked.
