what kind of nut do you mostly use when making pesto?
pine nuts

Can someone post a recipe? I’m willing to buy the ingredients, but only if it’s really worth it. A good pesto I’ll eat nearly plain.

There is a really good recipe for pesto in Millennial Kosher, using pistachios.

Pine nuts. I've used walnuts, I enjoy the dry bitterness they impart, but usually I use (toasted) pine nuts. I've never heard of using almonds, I would think they'd be too bland but I guess I shouldn't knock it till I try it.

We call those pine nuts even though technically they are seeds.

I use ground, blanched almonds. So much more readily available than pine nuts. They add to the consistency & have a neutral flavor.
Don’t use ground almond with the peel - I tried once & it was awful!
