ISO chicken sauces and marinades for PESACH

I’m looking for chicken recipes
Marinades or sauces that I can freeze raw with the chicken
Then defrost and bake whenever I’m ready to serve.
I use all spices

Something with olives capers sundry tomato, ok, but needs to have lots of flavour.

Also something garlicky and herby is good.

Would like 4 different types

Last time I tried this for Tishre it was extremely bland

Can it be just seasoning, no sauce?
Our favorites:
Garlic chicken from bais Yaakov cookbook (spice chicke parts with paprika, garlic onion powder salt and pepper, stuff and surround with garlic cloves, place on a bed of sliced onion [I added that part], drizzle with olive oil. Freeze, then bake at 350 covered for 3-4 hours; keep an eye on it; or 300 for longer.)
Simple Stuffed chicken from kosher.com by brynie greisman (recipe calls for flour but I'm sure you can use potato starch for pesach)

Do you have amounts of seasoning
Last time my chicken came out bland
Maybe I didn’t season it enough

This is definately a winner
Need more ideas like this
Maybe something with Olives, lemon, or sundry tomatoes,
But I need amounts.

I like simple. White wine and garlic powder. I cut the chicken into strips, put into a ziploc bag. Pour in white wine and garlic powder. You can either prepare it right before using or freeze raw and grill it fresh in a grill pan. Super tasty

Since I use minimal ingredients on pesach I use lots of juice of oranges, lemon or wine on meats. Also grated white horseradish & lots of onions/sauteed onions to get flavor
