Wondering if I can try with potato starch or is it just a waste of time?

If you're just planning to try with potato starch - skip it.

Pesach kichel/ crackers
Ingredients:
3 eggs
2 T. sugar
1/2 c. oil
1/2 t. salt
1 3/4 c. potato starch
Directions:
Put all ingredients in one bowl. Mix with a fork. Spread on a large parchment lined cookie sheet. Bake 350º for 10 minutes. Then remove from oven and cut into squares. Put back into oven and bake for half an hour.
I use coconut sugar usually. They are really really great. I make a ton of them.

I did them and the taste we like. But dh prefers them softer. Should I bake them shorter time or lower the temperature instead?

What about mashed potato dough. I made a recipe last year for rolls that was excellent.
