Pesach bagels? Potato starch?

Has anyone made with potato starch? I heard there is a recipe people use for bagels on pesach .... not sure what it it.
Wondering if I can try with potato starch or is it just a waste of time?

I once tried a cheese bread recipe made out of tapioca starch. It didnt really agree with me but lots of other people I know loved it. https://www.simplyrecipes.com/.....read/

If you’re ok with the bagels being dairy
Search Keto fat head dough
This dough can be used for bagels, pizza, turnovers, I made hamentashen for purim stuffed it with spinach

Pesach kichel/ crackers
Ingredients:
3 eggs
2 T. sugar
1/2 c. oil
1/2 t. salt
1 3/4 c. potato starch

Directions:
Put all ingredients in one bowl. Mix with a fork. Spread on a large parchment lined cookie sheet. Bake 350º for 10 minutes. Then remove from oven and cut into squares. Put back into oven and bake for half an hour.

I use coconut sugar usually. They are really really great. I make a ton of them.

I did them and the taste we like. But dh prefers them softer. Should I bake them shorter time or lower the temperature instead?
