As a foreigner living in the states I have no idea what it is. Plain cooked shabbes chasidish fish? I'm trying to guess the word poached

Poached in liquid is correct. It is done at a low temperature so it isn't boiled and the flesh remains soft and succulent.
It's an excellent way to prepare salmon (or chicken breasts even) when you plan to serve cold.
It is generally served with a sauce - the most traditional sauce is a Hollandaise sauce but I have had other sauces.
I cook it very regularly because it is a foolproof and easy way to serve guests when you want food prepared in advance. My favorite recipe for the sauce is actually a jicama based relish type of sauce because it's a bit healthier and less heavy than Hollandaise.
