I hate to sound so frum, but no way would I shop at a butcher who let you do that.

I sometimes use shank that’s been cut into 3/4-1 inch medallions
Season and sear the medallions (you can freeze at this point)
Then I make a tomato base sauce or mushroom and onion
Pour it on top and cook low and slow
300 for 11/2 hrs.
