I never make ahead and freeze but I would like to since I have the opportunity to make ahead now.
Potato kugels - just make my regular recipe, wrap well and freeze? Or freeze it raw? What's best?
What about making yapchik ahead? Cooked? Raw?
Or what about just peeling and shredding the potatoes and then freezing them like that, ready to go? (It's really the prep work that's time consuming). What's best???
I want to do some baking too. I know I can make and freeze brownies. But what about almond macaroons? Or meringues? Are they freezable? I'm thinking meringues probably not, so how many days ahead can I make them and store in air tight container?
Glad to take recommendations on any other fabulous dishes that can be made ahead and frozen. (Non-gebrokts and peeled produce only). Soup and brisket are already done.

All baked goods will do just fine in the freezer.
Potato kugel freeze ready baked.
Do not shred raw potatoes and freeze.
Yapchik don't freeze either, unless you mean a potato kugel with meat inside, then that should be fine.

Re: yapchik.... yes, potato kugel with bonesless flanken layered in. Is that not what yapchik usually is? That's what we call it in our family.

I made my regular potato kugel recipe, but with flanken underneath, and called it "yapchik". Wrapped, froze.
I finished making pesach 2 weeks ago! I only made recipes that freeze well. Meatballs, soups, fish, roasts, chickens, kugels. All living in my freezer!
Most pastries (cakes, cookies, freeze well).
