I don't have a crockpot for pesach and I haven't made a cholent without it in a long time. I think I would like to make one in the oven for shabbos lunch (first day of yt). Can anyone give me some guidelines? How much water? How hot should I leave the oven? Etc.

I've done this a few times. Cook it on 350 before Shabbos, then leave on 225 (iirc) over Shabbos. Put in a lot of water just before Shabbos so it doesn't dry out. Other than that, just use your regular recipe.

I make it in a 9x13 and just fill the water all the way to the top.

I do the same. I fill it - cover very tightly and I don’t open it again until we serve it.
If we are more people I’ll use a roaster pan. But whatever the size I fill with ingredients and then fill with water.
