I don’t use any processed ingredients on Pesach, and my food is prettyy bland without regular spices (pepper, paprika, etc.).
Can someone help me out with some homemade spices that I can use for grilled chicken? I’m not looking for sweet sauces (duck sauce...)

Fresh herbs add a ton of flavor. Basil, oregano, parsley, cilantro, mint, etc. You can chop it finely and use as seasoning.

You can peel, slice, dehydrate in oven and grind peppers for paprika.
Same for shallots.

Good idea - but checking for bugs on fresh herbs is not fun

Do I need a dehydrator or other specialized equipment? Can you give me exact directions?

Do you peel everything? If so your options are ginger (peel and grate) chili peppers (very hot so be careful with these) and it seems papaya seeds can be used like pepper.
Heres a method for making paprika that you can apply to other things like onions. (I had no idea paprik was made from bell peppers )

You can leave it to dehydrate overnight in the oven. No dehydrator needed.
But you do need a coffee grinder if you want the powder to be very fine.

Can't help you with paprika but you can buy whole spices and grind with a coffee grinder (around $20). Whole cumin seed, coriander seed, cinnamon stick, black pepper, cloves, fennel seed, along with some fresh onion and garlic that should make a very flavorful chicken dish.
