Parve mushroom side dish (Pesach)

Looking to make a mushroom side dish (maybe similar to a crustless quiche) that doesn't require margarine and little or no mayonnaise. No quinoa or kitniyot. (I am making other roasted veggies so I am looking for something a bit different).

Just looked through Kosher.com - all call for onion soup mix, mayonaise or baking powder. Well, I do make my own mayo but does anyone have a mushroom kugel with only basic ingredients.

Married Nate portobellos and grill or roast them. So good! Also trying a mix of mushrooms (maitake, oyster, Cremini, shiitake, etc) and sautéing in shmaltz is simple but so rich and tasty

This might fit the bill. Do you think I can sub baking soda for the baking powder or just leave it out?

You can use baking soda but activate it first with a drop of lemon juice so it bubbles before you put it in to the kugel.

This works well as a side dish, but it's not kugel-ly.

Sauteed Mushrooms:

40 oz white mushrooms, cleaned and quartered
2 larger onions, diced
1/2 cup olive oil
Salt and pepper
2 tsp crushed garlic
Onion and garlic powder
3 Tblsp chopped parsley (fresh!)

Saute the onion in the oil until soft. Add everything else except the parsley and saute for a long time (at least 45 minutes). Add the parsley at the end. Serve warm.

Freezes well.

I was going to suggest the same thing.

I just made and froze my sauteed mushrooms last night. My recipe is a drop simpler. Chop and saute onions in oil. Ad sliced mushrooms, saute until mushrooms are cooked and liquid is mostly evaporated. Add a couple of tablespoons of wine, salt and pepper to taste, cook until wine evaporates.

You can fill crepes (eggs and potato starch) with sauteed onions and mushrooms.

Lazy marinated mushrooms:

Get a bottle of pesadik Italian salad dressing (regular or lite).

Put mushrooms in a wide skillet, and pour dressing in just enough to coat the mushrooms, and a little left over for sauce. Simmer until the dressing is reduced by about half, stirring to make sure that the mushrooms cook evenly.

To make it fancier, cook with a can of artichoke hearts, drained.

Delicious warm or cold, or poured over meat or fish.

(You can make your own Italian dressing if you want, but sometimes I like super easy.)

Thanks. I usually make my own dressings. Do you think just a simple olive olive, lemon and herb type recipe would work with this?
