I would say light olive oil for baking.

Frying I'm not sure because I don't usually fry.

Avocado oil is supposed to be good for frying. For baking I would use coconut or light olive oil.

I know extra light olive oil is more refined than extra virgin, but I find it the healthiest, most versatile and best tasting from all other options available, for all my pesach needs.

Warning. I love avocados, but I found avocado oil to be one of the most vile tasting things I have ever in my life encountered.

Peanut oil is good for frying, but it isn't commonly considered kosher for Passover any more. Used to be.

I'm curious how this happened. My mother tells me that growing up in NY and NJ everyone used peanut oil on pesach. The frummest of the frum. Then one day suddenly someone decided it's kitniyot?

Yes. That person was Rav Cottonseed.

They even distributed a free Pesach cookbook every year.

I still make the rolls. And yes, everyone used it.

In any case, AFAIK, R' Moshe Feinstein allowed peanut oil. Then cottonseed oil was invented, and people decided he was wrong.

I wouldn't use olive oil, light or not for frying. It's like you are choosing between worse and worse. All the oils, cottonseed or vegetable are terribly unhealthy. Olive oil breaks down under high temperatures= very unhealthy. So choose your poison.

I got the reasoning from Google, so take it with a grain of un-iodized, KLP salt.

(I remember using peanut oil, OTOH.)

Extra light olive oil has a very high smoke point. It fries like (and is as light as) canola oil. Check on Google. Smile

We use it for our KLP cakes and cookies too.

Agree about the avocado oil.
It's probably the best option.
I don't taste it at all. I guess some people are more sensitive?

I agree with ra_mom. Extral light olive oil is the best for frying. Safflower oil is the best for baking. Some people consider safflower oil to be kitniyot, but Star-K allows it for Pesach.

I use coconut oil or avocado oil. I've had avocado oil that was totally mild to tasteless and avocado oil that was bitter and grotesque. I don't know if it varries brand to brand or the bad ones were literally bad, and had turned.
