ISO amazing No Fail Non-Gebrokts Cookie recipes, made w. oil

Does anyone have recipes they use from year to year that their family loves, that are No Fail Non-Gebrokts Cookie recipes, made w. oil (no margarine). Looking for no-oil cake recipes as well, but most cookies last all Yom Tov, even out of the freezer, so theyre preferable.

Ill start with OOT Bubby's Nina Biscuits from 2012 that I love.

2 cups potato starch
1 cup sugar
1 tbsp. vanilla sugar
1 cup ground almonds
3/4 cup ground coconut
2 eggs
1 cup oil

Preheat oven to 350. Line a baking sheet with parchment. Set aside.

Whisk together potato starch, sugars, nuts and ground coconut. Add eggs and oil mixing until just combined.

Shape into 3/4-inch balls. Place on baking sheet about 1½ inches apart.

Bake for 16-18 minutes until golden but still light. Cool on rack. Freezes well.

Note: I used shredded not ground coconut and my cookies didn't flatten, but stayed as balls, but still tasted good.

We kept it simple. Homemade walnut flour and sugar water. Depending on the course ness of the rain and rations you can have crunchy or soft.

This is my favorite

Filbert cookies

2 cups potato starch
6 oz ground filbert
2 eggs
1 cup oil
1 cup sugar

Bake on 350 for 20 mins.

We love unbelievable brownies, all almond chocolate chip bars, moist chocolate cake, chocolate fudge bombs and chocolate chip cookies.

I made the 123 cookies and they were grabbed off the cookie sheet!
1 cup sugar
2 eggs
3 cups ground nuts (I used a mix of filberts and almonds)

Delish!

"Chometzdik Pesach Chocolate chip cookies-non gebrokts"
1 cup sugar
1 cup brown sugar
2 eggs
1 cup oil
2 tsp vanilla sugar
2 bags ground almonds
1 cup potato starch
1 tsp baking powder
1 tsp baking soda
1 cup choc chips

Mix, shape,( freeze for 10 minutes-optional), bake 350 14-16 minutes

These are good enough to eat all year round.
You can use raisins instead of chocolate chips too.

If anyone makes these, can they please comment on the result.

I prefer trying recipes that many say they tried and loved.
