We eat these cakes once a year and are very happy with the collection. Smile
I am editing now to add a marble cake from the Ami magazine. One bowl / no mixer white pesach cakes are very hard to produce. But this is the best we've ever tried (and we've tried many). Yes we like the KLP boxed one best, but this cake was eaten until the last crumb so I'm for sure adding it to the collection.

One bowl, no mixer.

Marble Cake
6 eggs

Yes. It's not chometz but it's the best yellow/marble cake that doesn't require separated eggs. The pan was scraped clean by all of us.

Here is a very nice, easy little marble cake for those who eat gebrokht.
I made it last year and really liked it. This year I can't spare the eggs (which I'm saving for another batch of Sanguine's brownies which the kids loved) and have no cake meal, otherwise I would have gladly made it again.
It's baked in a smallish loaf pan - what is called an "English Cake" pan here in Israel.

2 eggs
2/3 c. sugar
1/2c. oil
1/2 c. orange juice
2/3 c. cake meal
1/4c. potato starch
1 tsp. baking powder
1 rounded tablespoon cocoa (or shoko powder)
3 Tblsp coconut (optional)

Preheat oven to 350. Grease a small loaf pan or a small round pan.
Beat eggs with sugar for two minutes (if not using mixer, beat vigorously by hand) until light and fluffy.
Add oil and orange juice and mix to combine.
Add cake meal, potato starch, baking powder and coconut and mix to combine.
Pour half of batter into pan.
To remaining batter in bowl add cocoa and mix to combine.
Pour chocolate batter over white batter in pan and marbelize with knife.
Bake for about 35-40 min.

It has its own thread but here it is for those who might not have seen it. I have a pan of them in the oven even as we speak Smile

Pesach brownies you can cut (by Sanguine z"l)

1 C. Oil
4 eggs
1 3/4 C. Sugar
3/4 C. Potato Starch
3/4 C. Cocoa
1 pkg vanilla sugar
(optional - throw in some chocolate chips)

Mix and bake at 350 (or a little hotter depending on how your oven works) for half an hour (or more) - Usually much more than half an hour. Touch the cake in the middle to see if solid or test with toothpick - may be a lot more time. Don't be afraid to let it keep baking till you're sure it's solid

I use a foil pan which is actually 8 1/2 x 10 1/2 if you measure the very bottom of the pan (the top is much bigger and they call them 9 x12 but the bottom will give you the size I'm talking about

Optional glaze: melt together 2 cups confectioners sugar, 1 stick margarine, 1/3 cup cocoa, 1 tsp vanilla extract and 1/8 cup water in a double boiler. Spread over cooled cake.

They're not interchange. But there are plenty of recipes without starch.

Thanks Ra_Mom! I knew I could count on you to have the answer.

My girls are getting older & now that they bake they want more recipes. Our ingredients are very limited (but in different ways then many other people, so most recipes present issues for us).

We make tons of the 1-2-3 cookies every year. Some with nuts (almonds) and some with a combo of nuts & matzo meal so they are mezonos. We also make meringues (plain & w/ cinnamon sugar on top). We also make a gebrocts sponge cake that everyone loves.

Almond flour is a new ingredient for us (last year was the first time we got it), so I'm looking for new recipes. The choc chip squares from between carpools should work for us as brownies. She lists it as a variation. We don't use chocolate (but we do use cocoa) and I'll replace the oil (we only have olive) with applesauce.

(I'm really hoping these details don't out me, if anyone figures out who I am, please let me know)
